Makkarakastike (Finnish sausage cream sauce)

Recipes with Lenkkimakkara

Lenkki, onion and cream, ready in fifteen minutes and served over boiled potatoes. In HKScan's 2023 survey Finns ranked it their second-favourite lenkki dish, after oven-baked sausage. This version follows the recipes of the dairy Valio and the grocer K-Ruoka.

Ingredients

  • 500 g lenkkimakkara, casing removed
  • 2 onions
  • 1 tbsp butter or oil
  • 1 tbsp wheat flour (optional, for a thicker sauce)
  • 2 dl cooking cream (15 %)
  • 1-2 dl water
  • ½ beef stock cube
  • 1 tbsp mild Finnish mustard
  • 1 tsp tomato purée
  • A pinch of ground allspice or black pepper
  • ½ dl chopped parsley
  • Boiled potatoes, to serve

Steps

1

Cut the sausage into small cubes, or halve it lengthwise and slice it into half-moons. Chop the onions fine.

2

Brown the sausage in the butter for a couple of minutes, add the onion and keep frying until it turns light golden.

3

For a thicker sauce, dust in the flour and stir. Take the pan off the heat, stir in the water, then return it to the stove and pour in the cream.

4

Crumble in the stock cube and season with mustard, tomato purée and allspice. Let it simmer gently for 5 to 10 minutes.

5

Scatter over the parsley and serve with boiled or mashed potatoes, a glass of milk and ketchup on the side for those who want it.

Tips

Brown the sausage well before the cream goes in: the crust is where most of the flavour of a mild lenkki comes from.
