AI-generated Uunimakkara (Finnish oven-baked sausage with cheese)
Recipes with Lenkkimakkara
Uunimakkara is the lenkki dish Finns name first: in HKScan's 2023 survey it topped the list, and most of its fans want it with cheese. The sausage is peeled, cut deep across the top, filled and baked. This version follows the recipe from the cookbook Kauppias ja 3 kokkia, published by MTV, with bacon as an option.

Ingredients
- 2 lenkkimakkara rings (about 900 g in all)
- 100 g Emmental, cut into thin slices
- 1 dl ketchup
- 2 tbsp mild Finnish mustard
- 1 small onion, chopped (optional)
- 1 pack of bacon (optional)
- Mashed potatoes and a green salad, to serve
Steps
Heat the oven to 200 °C. Slit the casing lengthwise and peel it off the sausages.
Lay the rings in an oven dish and cut deep slits across the top every 2 cm, about two thirds of the way through, so the ring holds together.
Spoon ketchup and mustard into the slits, add a little onion if you like, and push a slice of cheese into each cut. For the bacon version, wrap the rings in bacon and leave both ends open.
Bake for 15 to 20 minutes, until the cheese has melted and browned and the bacon is crisp.
Cut into portions at the table and serve with mashed potatoes and salad.
Tips
Cut the slits on the outer curve of the horseshoe: they open up in the oven and hold more filling.
