Classic Charcoal-Grilled Thueringer

The authentic way to enjoy a Thueringer Rostbratwurst: grilled over charcoal until perfectly charred, served in a Broetchen with spicy Thuringian mustard.

Ingredients
- 4 Thueringer Rostbratwurst
- 4 small bread rolls (Broetchen)
- Thuringian mustard (Born Senf or similar)
- Charcoal for grilling
- Optional: sauerkraut on the side
Steps
Light charcoal and let it burn down to glowing embers with a thin layer of white ash. The grill grate should sit about 20cm above the coals.
Place the bratwurst on the grill. Important: never prick the casing with a fork, or you will lose the juices.
Grill for 12-15 minutes, turning frequently with tongs. The sausage should develop an even, dark golden-brown char on all sides.
Slice the Broetchen open but not all the way through. The roll should be noticeably smaller than the sausage -- this is tradition, not a mistake.
Spread mustard inside the Broetchen, nestle the grilled sausage in, and serve immediately. The wurst should stick out generously on both sides.
Tips
If a sausage casing bursts during grilling, briefly douse the flames with a splash of beer -- this is actually a traditional technique called 'Abloeschen' that adds flavor.
