  • 4 Thueringer Rostbratwurst
  • 500g sauerkraut, drained
  • 2 large onions, sliced into rings
  • 330ml dark German beer (Schwarzbier)
  • 2 tbsp butter or lard
  • 1 tsp caraway seeds
  • 1 bay leaf
  • 1 tsp sugar
  • Salt and pepper to taste

In a large skillet or braising pan, melt the butter over medium-high heat. Brown the bratwurst on all sides for about 3-4 minutes, then set aside.

In the same pan, cook the sliced onions until soft and golden, about 5 minutes. Add the caraway seeds and stir for 30 seconds until fragrant.

Add the sauerkraut, sugar, and bay leaf. Pour in the dark beer and stir to combine. Bring to a gentle simmer.

Nestle the browned bratwurst into the sauerkraut mixture. Cover and simmer on low heat for 25 minutes, turning the sausages once halfway through.

Remove the bay leaf, season with salt and pepper. Serve the bratwurst on a bed of the beer-braised sauerkraut with crusty bread or boiled potatoes.

Tips

Use a Thuringian Schwarzbier if you can find one. The darker the beer, the richer the sauce. Do not use a hoppy IPA -- the bitterness will overpower the dish.
