Recipes with Sosis Bandari

A newer Iranian fast food variation where sliced processed cheese or mozzarella goes over the sausages in the final minutes of cooking, or directly onto the open sandwich before it is wrapped. The cheese melts into the tomato sauce and rounds its acidity. Tehran sandwich shops started adding this option in the 2000s and it has stayed on menus since.

Ingredients

  • 4 Iranian beef hot dog sausages (sosis), scored
  • 60g processed cheese slices or mozzarella, torn
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 ripe tomatoes, chopped
  • 1 fresh red chili, sliced
  • 1 tsp turmeric
  • 1 tsp curry powder
  • Salt and black pepper
  • 3 tbsp vegetable oil
  • 2 demi-baguettes or rolls

Cook the sosis bandari following the standard method through to the point where the sausages have been simmering in the sauce for 8 minutes.

Lay the cheese slices or torn mozzarella directly over the sausages in the pan. Cover with a lid and cook on low heat for 2 more minutes until the cheese melts into the sauce.

Split the rolls. Spoon the cheese-covered sausages and sauce into the bread, making sure cheese and sauce get into the interior.

Wrap and serve immediately while the cheese is still melted.

Tips

Processed cheese melts faster and more evenly than mozzarella and is what most Iranian sandwich shops use. Mozzarella is stringier and more visible in the sandwich. Both work. Do not use aged hard cheeses — they do not melt properly into the sauce.
