- 3 Schüblig sausages
- 250g green or brown lentils
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 bay leaves
- 750ml beef or vegetable stock
- 1 tbsp red wine vinegar
- Fresh parsley
- Salt, pepper
Steps
Sauté diced onion, carrots, and celery in a large pot with a little oil until softened.
Add lentils, bay leaves, and stock. Bring to a boil, then simmer for 25 minutes.
Slice the Schüblig into 1cm rounds and add to the stew. Cook for another 10 minutes.
Season with vinegar, salt, and pepper. Remove bay leaves.
Serve in deep bowls, garnished with fresh parsley and crusty bread.
Tips
A splash of vinegar at the end brightens the earthy lentils. This stew is even better the next day.
