Ingredients

  • 3 Schüblig sausages
  • 250g green or brown lentils
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 bay leaves
  • 750ml beef or vegetable stock
  • 1 tbsp red wine vinegar
  • Fresh parsley
  • Salt, pepper

Steps

1

Sauté diced onion, carrots, and celery in a large pot with a little oil until softened.

2

Add lentils, bay leaves, and stock. Bring to a boil, then simmer for 25 minutes.

3

Slice the Schüblig into 1cm rounds and add to the stew. Cook for another 10 minutes.

4

Season with vinegar, salt, and pepper. Remove bay leaves.

5

Serve in deep bowls, garnished with fresh parsley and crusty bread.

Tips

A splash of vinegar at the end brightens the earthy lentils beautifully. This stew is even better the next day.
