Ingredients

  • 2 Schüblig sausages
  • 2 Bürli (Swiss bread rolls)
  • Grainy Swiss mustard
  • Optional: pickled gherkins

Score each Schüblig with 5-6 diagonal cuts on one side, about 5mm deep.

Grill over medium heat for 8-10 minutes, turning regularly, until the cuts open and edges crisp.

Serve immediately with a torn Bürli and a generous dollop of grainy mustard.

Tips

Don't cut too deep or the sausage will split apart. 5mm is perfect. A cast-iron pan works just as well as a grill.
