Ingredients
- 4 frankfurter sausages (salchichas)
- 500g starchy potatoes
- Vegetable oil for frying
- Salt
- 2 eggs
- 100g grated mozzarella or mild cheddar
- For guacamole: 1 ripe avocado, 1 tbsp lime juice, 1 tbsp finely diced white onion, salt
- For salsa rosada: 2 tbsp ketchup, 2 tbsp mayonnaise, 1 tsp lime juice
- For pickled onion: 1 small red onion, sliced thin, 4 tbsp lime juice, pinch of salt
- 4 tbsp chicharrón crumbles or crispy bacon bits
Steps
Pickle the red onion first, at least 15 minutes before serving: toss the thin slices with lime juice and salt in a small bowl. The onion softens and turns pink. Drain before plating.
Make the guacamole: mash the avocado with lime juice, diced onion, and salt. Keep it chunky. Cover with plastic wrap pressed directly onto the surface to prevent browning.
Make the salsa rosada: stir ketchup, mayonnaise, and lime juice together. Set aside.
Fry the potato strips at 175°C until golden, about 5 to 6 minutes. Drain and season with salt. Keep warm.
Fry the sausage coins in hot oil for 2 to 3 minutes until the cut faces are browned. Drain and keep warm.
Fry the eggs in a small amount of oil over medium heat, sunny side up, until the whites are set and the yolks remain runny.
Build the plates: fries first, then sausage coins. Scatter the grated cheese over the hot sausage and fries so the heat melts it slightly. Add a spoonful of guacamole on one side, drizzle salsa rosada over the centre, lay the fried egg on top, and finish with pickled onion and chicharrón crumbles.
Tips
The order of assembly matters. The cheese needs the residual heat from the fries and sausage to soften; if the plate is cold before you add cheese, it will just sit there as a pile of grated cheese. Get everything else ready before the frying starts so the dish comes together fast.
