Ingredients
- 500g pizza dough (homemade or store-bought)
- 100g 'nduja
- 200g fior di latte mozzarella, torn
- 150ml San Marzano tomato sauce
- 3 tbsp honey
- 1 tsp chili flakes (for hot honey)
- Fresh basil leaves
- Extra virgin olive oil
- Semolina or flour for dusting
Steps
Make the hot honey: gently warm the honey with chili flakes in a small saucepan over low heat for 5 minutes. Do not boil. Set aside to infuse while you prepare the pizza.
Preheat oven to the highest setting (250-280C / 480-535F) with a baking stone or inverted baking sheet inside for at least 30 minutes.
Stretch the pizza dough into 2 rounds on a floured surface. Spread a thin layer of tomato sauce, leaving a 2cm border. Scatter the torn mozzarella across the surface.
Bake for 8-12 minutes until the crust is puffed and charred in spots, and the cheese is bubbling. The base should be crisp.
Immediately after removing from the oven, dollop teaspoon-sized pieces of 'nduja across the pizza. The residual heat will soften them into spicy, melting pools. Drizzle the hot honey over everything, add fresh basil, and serve immediately.
Tips
Adding the 'nduja after baking is crucial -- it preserves the bright, raw spice flavor instead of cooking it into the sauce. The hot honey can be made ahead and stored in a jar for weeks.
