Ingredients

  • 1 grilled mutura sausage, sliced into 1cm rounds
  • 4 eggs
  • 2 chapati (or flatbread)
  • 1 tablespoon vegetable oil
  • Kachumbari to serve
  • Hot sauce (optional)

Steps

Heat oil in a large skillet over medium-high heat. Fry the mutura slices for 2-3 minutes per side until the edges crisp up and the fat renders.

Push the mutura to one side of the pan. Crack the eggs into the open space and fry them in the rendered mutura fat. Season with salt.

Warm the chapati in a dry pan or directly over a gas flame for a few seconds per side.

Plate the mutura and eggs together. Serve with warm chapati, kachumbari on the side, and hot sauce if you want more heat.

Tips

The mutura fat is your cooking fat for the eggs. It gives them a smoky, spiced flavor you cannot get from oil. Chapati is the bread of choice here, not toast. Tear pieces off and use them to grab the mutura and egg.
