Loukaniko Pita Wrap

Loukaniko Pita Wrap

Recipes with Loukaniko

Street-food style: grilled loukaniko sliced and wrapped in warm pita with tzatziki, sliced tomato, and onion. The same logic as a souvlaki wrap, but with the sausage as the main event. Quick to make at home if you have a grill pan.

Ingredients

  • 3 loukaniko links (about 300g)
  • 2 Greek pita breads
  • 4 tablespoons tzatziki
  • 1 ripe tomato, thinly sliced
  • 1/2 small red onion, thinly sliced
  • Fresh flat-leaf parsley, roughly chopped
  • Olive oil
  • Salt

Steps

1

Heat a grill pan over high heat until smoking. Brush the loukaniko links with a little olive oil. Grill, turning every 2-3 minutes, for 10-12 minutes total until the casing is charred in spots and the sausages are cooked through. Rest for 2 minutes.

2

Warm the pita breads in a dry pan for 30 seconds each side, or directly over a gas flame for a few seconds until they puff slightly.

3

Slice each loukaniko diagonally into 4-5 pieces.

4

Spread 2 tablespoons of tzatziki across the center of each pita. Lay the loukaniko slices down the middle, then add tomato, onion, and parsley. Season with a pinch of salt.

5

Fold the pita around the filling and wrap in paper for easy eating.

Tips

Greek pita for wraps is thicker and softer than Lebanese pita. It does not have a pocket. If you only find pocket pita, use it open, folded in half over the filling. The loukaniko needs actual grill marks for this to work, not just light frying.
