Korv Stroganoff
Recipes with Falukorv
Sweden's answer to beef stroganoff, except cheaper and faster. Falukorv cubes replace the beef, simmered in a sauce of tomato paste, cream, and a splash of soy sauce (the secret Swedish ingredient). Served over rice. This is the dish that kept Swedish students alive through university. It costs almost nothing and feeds a crowd.

Ingredients
- 500g falukorv, cut into 2cm cubes
- 1 onion, diced
- 2 tablespoons butter
- 3 tablespoons tomato paste
- 200ml cream
- 100ml water
- 1 tablespoon soy sauce
- Salt and black pepper
- Rice for serving
Steps
Cook rice according to package instructions. Keep warm.
Melt butter in a large pan over medium heat. Fry the onion until soft, about 3-4 minutes.
Add the falukorv cubes. Fry 3-4 minutes until they pick up some color on the edges.
Stir in the tomato paste and cook for 1 minute. Add cream, water, and soy sauce. Stir well.
Simmer for 5-7 minutes until the sauce thickens slightly. Season with salt and pepper. Serve over rice.
Tips
The soy sauce is not optional. It adds a depth that tomato paste alone cannot deliver. Some families add a teaspoon of paprika or a pinch of cayenne. Leftovers reheat well the next day.
