Recipes with Lincolnshire Sausage
The Full English is a construction project: sausages, bacon, eggs, beans, toast, mushrooms, tomatoes, and black pudding, all on one plate. The Lincolnshire sausage anchors the whole thing with sage and pork. Every component must be cooked separately and arrive at the table simultaneously hot. This is the hardest part.

Ingredients
- 4 Lincolnshire sausages
- 4 rashers back bacon
- 4 eggs
- 1 tin baked beans (400g)
- 4 slices thick white or brown bread
- 4 mushrooms, halved
- 2 tomatoes, halved
- 2 slices black pudding (optional)
- Butter
- HP Brown Sauce for serving
Steps
Start the sausages first. Cook in a pan over medium heat with a little oil for 18-20 minutes, turning regularly. They take the longest.
After 10 minutes, add the mushrooms and halved tomatoes (cut-side down) to the pan. Warm the beans in a small saucepan. Start the bacon in a separate pan.
When the bacon is crispy (3-4 minutes per side), set aside. Fry the black pudding 2 minutes per side. Toast the bread and butter it.
Fry the eggs last, in bacon fat, spooning the hot fat over the whites. Everything should be ready at the same moment. Plate immediately: sausages, bacon, eggs, beans, toast, mushrooms, tomatoes, black pudding. Serve with HP Sauce.
Tips
The timing is everything. Write down the order: sausages first, then mushrooms and tomatoes, then beans and bacon, then toast, then eggs last. If the eggs are cold when the sausages are hot, you have failed. Use a warm plate.
