Ingredients

  • 400g farmer's sausage
  • 4 medium potatoes, diced
  • 3 carrots, diced
  • 2 onions, diced
  • 6 cups chicken broth
  • 2 tbsp butter
  • Salt and pepper
  • Buttered bread for serving

Dice 2 onions, 3 carrots, and 4 medium potatoes.

Sauté onions in butter in a large pot until soft, about 5 minutes.

Add carrots, potatoes, and 6 cups chicken broth. Bring to a boil.

Reduce heat and simmer 15 minutes until potatoes are tender.

Cut 400g farmer's sausage into bite-sized chunks and add to the pot.

Simmer 10 more minutes. Season with salt and pepper.

Tips

Add the sausage late so it heats through without losing its smoky bite. If you want a thicker soup, mash a few potato chunks against the side of the pot with a wooden spoon. Leftover soup thickens overnight in the fridge and reheats well.
