Falukorvsgratäng
Recipes with Falukorv
Falukorv sliced and layered in a baking dish with tomato, cream, and cheese, then baked until bubbling and golden. A Swedish household staple that turns a budget sausage into something that feels like a proper meal. Children ask for this one by name. The cheese crust is the whole argument.

Ingredients
- 500g falukorv, sliced 8mm thick
- 200ml cream (grädde)
- 2 tablespoons tomato paste
- 1 teaspoon Dijon mustard
- 150g grated cheese (Västerbotten or mature cheddar)
- Salt and white pepper
- Butter for greasing
Steps
Preheat the oven to 225°C (435°F). Butter a baking dish.
Arrange the falukorv slices upright in the dish, overlapping slightly like roof tiles.
Mix the cream with tomato paste and mustard. Season with salt and white pepper. Pour the mixture over the sausage slices.
Scatter the grated cheese over the top in an even layer.
Bake 25-30 minutes until the cheese is golden and the cream is bubbling around the edges. Let it rest 5 minutes before serving.
Tips
Västerbotten cheese is the classic Swedish choice here, with a sharp, granular flavor. If you cannot find it, a mature cheddar or gruyère works. Serve with a green salad to cut through the richness.
