Recipes with Longaniza Chilena
The loaded Chilean version of a longaniza sandwich, built like a completo (Chile's maximalist hot dog). A grilled longaniza goes into a marraqueta roll, then gets buried under mayo, diced tomato, sauerkraut, and mashed avocado. The combination sounds excessive. It works. The acidity of the sauerkraut and the fat of the avocado balance the grilled pork. Street carts in Santiago sell these late at night.

Ingredients
- 4 longaniza chilena sausages
- 4 marraqueta rolls (or large hot dog buns)
- 4 tbsp mayonnaise
- 2 tomatoes, diced
- 1 cup sauerkraut, drained
- 1 ripe avocado, mashed with a fork
- Salt to taste
Steps
Grill the longanizas over medium-high heat for 10-12 minutes, turning often, until cooked through and charred in spots.
Split the marraqueta rolls and spread mayo on both cut sides.
Place one grilled longaniza in each roll. Top with diced tomato, a spoonful of sauerkraut, and a dollop of mashed avocado.
Press the sandwich closed (it will be messy) and eat with napkins ready.
Tips
The avocado should be ripe but not brown. Mash it rough, not smooth like guacamole. Chilean completo-style sandwiches are not meant to be neat. Accept the mess. Some places add a drizzle of ají sauce (green chili) on top.
