A beloved Swiss summer dish: sliced leftover Bratwurst tossed with onions, pickles, and a sharp vinaigrette. The perfect way to use up yesterday's grilled sausages — arguably even better than fresh.

Ingredients
- 2 cooked St. Galler Bratwurst (leftover from grilling)
- 1 small onion, thinly sliced into rings
- 4-5 cornichons (Swiss pickles), sliced
- 2 tbsp white wine vinegar
- 3 tbsp rapeseed oil
- 1 tsp Dijon mustard
- Salt, pepper
- Fresh chives, finely chopped
Steps
Slice the cooked Bratwurst into 5mm rounds.
Whisk together vinegar, oil, mustard, salt, and pepper to make the vinaigrette.
Combine the sliced Bratwurst, onion rings, and cornichons in a bowl. Pour the vinaigrette over and toss gently.
Let it marinate for at least 30 minutes in the fridge — an hour is even better.
Sprinkle generously with chives and serve with bread.
Tips
This salad gets better the longer it marinates. Make it in the morning for dinner. Some people add cubed cheese (Appenzeller or Emmentaler) for a heartier version.
