Ingredients
- 2 St. Galler Bratwurst
- 500g waxy potatoes (boiled the day before, peeled)
- 40g butter
- Salt and pepper
- 1 tbsp oil
Steps
Coarsely grate the pre-boiled potatoes. Season with salt and pepper.
Heat butter and oil in a non-stick pan over medium heat. Spread the grated potatoes evenly and press down gently into a flat cake.
Cook for 10-12 minutes until the bottom is golden and crispy. Flip carefully (use a plate if needed) and cook the other side for another 8-10 minutes.
Meanwhile, grill the Bratwurst in a separate pan over medium heat for 10-12 minutes until golden all around.
Slide the Rösti onto a plate, place the Bratwurst on top. Serve immediately.
Tips
The secret to great Rösti is using potatoes cooked the day before — they lose moisture overnight and get crispier. Don't stir the Rösti while cooking, let the crust form undisturbed.
