Classic Braai Boerewors

The one and only way: a whole coil of boerewors grilled over wood coals until charred and crispy outside, juicy and pink inside. Served with pap and chakalaka. This is not a recipe — it is a way of life.

Ingredients
- 1 kg boerewors coil (keep it whole!)
- Wood or charcoal for the braai
- Pap (maize porridge) for serving
- Chakalaka for serving
Steps
Build your fire and let it burn down to medium-hot coals — you should be able to hold your hand 15cm above the grill for about 4 seconds.
Place the entire boerewors coil on the grill. Do not cut it, do not straighten it, do not prick it.
Grill for about 8-10 minutes on the first side until deeply charred. Flip once using tongs (never a fork!) and grill for another 8-10 minutes.
Remove from the grill and let it rest for 2 minutes. Cut into portions and serve with pap and chakalaka.
Tips
The biggest mistake is cooking over flames instead of coals. Flames char the outside before the inside cooks. Patience with the fire is everything. And never, ever use a gas grill — that's not a braai.
