Farmer's sausage on the backyard grill, served with charred bell peppers and onions. This is the summer version, the one that shows up at every Manitoba community barbecue, church picnic, and hockey team fundraiser. The sausage is already smoked, so the grill just heats it through and adds char marks. Brushed with a mustard-based BBQ glaze in the last five minutes.

Ingredients

  • 600g farmer's sausage (whole rings or links)
  • 2 bell peppers, cut into thick rings
  • 1 large onion, cut into thick rings
  • 2 tbsp vegetable oil
  • 2 tbsp yellow mustard
  • 1 tbsp honey
  • Salt and pepper

Preheat grill to medium-high heat.

Cut 2 bell peppers and 1 large onion into thick rings.

Brush peppers and onions with oil, season with salt and pepper.

Place 600g farmer's sausage (whole rings or links) on the grill.

Grill sausage 4-5 minutes per side until heated through with good char marks.

Grill peppers and onions alongside, turning once, about 6 minutes total.

Mix 2 tbsp yellow mustard with 1 tbsp honey. Brush on sausage in the last 2 minutes.

Slice sausage and serve on a platter with the grilled vegetables.

Tips

The sausage is already cooked and smoked, so you are just heating it through and getting char marks. Do not overcook or the casing splits and the fat runs out. Apply the mustard-honey glaze in the last two minutes only, or it will burn.
