Ingredients
- 2 alheira sausages
- 2 medium potatoes, cut into wedges
- 1 red bell pepper, sliced
- 1 onion, quartered
- 4 garlic cloves, unpeeled
- 3 tbsp olive oil
- 1 tsp smoked paprika (pimentão)
- Salt and black pepper
Steps
Preheat oven to 200°C. Toss potato wedges, bell pepper, onion, and garlic with olive oil, paprika, salt, and pepper on a baking tray.
Roast the vegetables for 15 minutes until they start to soften and color.
Nestle the alheira sausages among the vegetables. Return the tray to the oven.
Bake another 15 minutes until the alheira skin is golden and taut. Serve directly from the tray.
Tips
Do not place raw alheira in the oven at the start with the vegetables. The sausage cooks faster and will dry out if baked for the full 30 minutes. Add it halfway through.
